# How to Make:

01 - Preheat oven to 400°F. Brush both sides of each tortilla with olive oil. Drape tortillas over upside-down oven-safe bowls or ramekins on baking sheet to form bowl shapes. Bake 8-10 minutes until golden and crisp. Cool completely before removing from molds.
02 - Heat large skillet over medium-high heat. Add ground beef and cook, breaking up with spoon, until browned, about 5 minutes. Add onion and garlic, sauté 2 minutes.
03 - Stir in tomato paste, chili powder, cumin, smoked paprika, salt, and black pepper. Cook 1 minute until fragrant. Pour in beef broth or water, reduce heat to medium, simmer 4-5 minutes until thickened.
04 - Whisk together sour cream, lime juice, cilantro, salt, and cumin in small bowl until smooth and well combined.
05 - Fill cooled tortilla bowls with shredded lettuce. Top with seasoned beef, cherry tomatoes, black beans, corn, avocado, cheddar cheese, olives, green onions, and jalapeño if desired. Drizzle with dressing and serve immediately.

  • The tortilla bowls continue to crisp as they cool so do not worry if they feel slightly soft right out of the oven
  • Overloading the bowls with warm beef makes the bottom soggy so add a layer of cold lettuce first to protect the crust
03 -
  • Use a pastry brush for the olive oil instead of your hands to avoid tearing the tortillas
  • Warm the tortillas for 15 seconds in the microwave before shaping so they are more pliable and less likely to crack
